Tem sido assim desde que o Bova&#8217;s foi inaugurado em 1926, quando os distribuidores que vinham buscar seus p\u00e3es acolheram com satisfa\u00e7\u00e3o a oportunidade de comer um peda\u00e7o de p\u00e3o rec\u00e9m-assado de manh\u00e3 cedo. <\/p>\n<p>\u201cTivemos que escalonar os hor\u00e1rios de coleta por causa das ruas estreitas, e foi assim que conseguimos nossa licen\u00e7a de 24 horas\u201d, conta John Kluse, gerente de longa data da Bova&#8217;s. A padaria usou a licen\u00e7a a seu favor, \u00e0 medida que gradualmente se tornou conhecida como o ponto de encontro dos trabalhadores em turnos, que sa\u00edam em hor\u00e1rios estranhos, quando a maior parte da cidade dormia h\u00e1 muito tempo, para comer algo doce ou salgado.<\/p>\n<p>Embora a Bova&#8217;s tenha come\u00e7ado como uma padaria, vendendo no atacado para supermercados e restaurantes em toda a Grande Boston e em alguns sub\u00farbios vizinhos, Kluse diz que a padaria passou por \u201cmuitas transforma\u00e7\u00f5es nos \u00faltimos 30 anos\u201d. Do p\u00e3o no atacado a uma breve era de delicatessen &#8211; \u201cisso foi simplesmente ca\u00f3tico\u201d, diz Kluse &#8211; ao seu menu contempor\u00e2neo com foco em doces, o Bova&#8217;s \u00e9 &#8211; e que est\u00e1 no card\u00e1pio desde o in\u00edcio. \u201cNo in\u00edcio, isso passa despercebido, mas \u00e0 medida que as pessoas experimentam, elas gostam e voltam para peg\u00e1-lo\u201d, compartilha Kluse.
